Our Artisanal Honey
In the heart of the Novara countryside, where nature still dictates the rhythm of the seasons, Cristian Invernizzi´s IMG Farm is passionately dedicated to one of the oldest and noblest arts: beekeeping. Our honey is not simply a food, but the liquid story of a region, a concentration of aromas and flavors that our bees tirelessly collect, flower after flower.
Bee Keepers, Nature´s Allies
Our philosophy is based on absolute respect for bees and their life cycles. We consider them our most precious collaborators, and for this reason we guarantee them the best living conditions, positioning our hives in pristine areas, far from sources of pollution, where they can forage freely among permanent meadows, woods, and wildflowers.
The beekeeper´s work is a patient wait, a silent dialogue with these incredible insects. From caring for the families during the winter to supervising the harvest in the spring and summer, every step is carried out with the utmost care so as not to disturb their delicate balance.
From Nectar to Jar: A Genuine Process
The quality of our honey comes from the purity of the process. Once the honeycombs are filled and capped, we proceed with extraction, which is strictly cold-pressed via centrifugation. This mechanical method, without any heat treatment, is essential for preserving all the precious nutritional and enzymatic properties of the raw honey, as well as its original aroma and flavor.
After extraction, the honey is left to settle naturally for a few days, allowing impurities and wax particles to rise to the surface. Only then, clear and dense, is it ready to be hand-filled, jar by jar.
Our Honeys: A Mosaic of Flavors
The Cameri area and surrounding areas offer a wonderful floral biodiversity, resulting in honeys with unique characteristics:
Acacia Honey: With a clear, limpid color and a delicate, candy-like flavor, it is perfect for sweetening without altering flavors.
Multi-Flower Honey: A true reflection of the flowering meadows. Each year is unique, a mosaic of aromas and flavors that vary depending on the prevailing blooms, from the sweetness of clover to the intensity of dandelion.
Linden Honey: With its characteristic fresh, minty aroma, it is a balsamic and refreshing honey, ideal for evening herbal teas.
Chestnut Honey: With a dark amber color and a strong, persistent flavor, with a slightly bitter finish. A honey for true connoisseurs, excellent paired with aged cheeses.
