In the watery lands of the Novara plain, an iconic landscape marked by canals and bodies of water, Cristian Invernizzi´s IMG Farm cultivates one of the most noble and distinctive grains in Italian tradition: rice. For generations, our family has been linked to this crop, which requires knowledge, patience, and a profound respect for water and the land.
The Rice Field: An Ecosystem to Preserve
For us, the rice field is not just a field to be cultivated, but a living, breathing ecosystem. We practice sustainable agriculture, managing water wisely and minimizing environmental impact to protect the rich biodiversity that populates our rice fields.
The rice cycle is a spectacle that renews itself every year: from the preparation of the soil in spring, to the flooding of the fields that transform into a checkered sea, to the brilliant green of the seedlings that thrive under the summer sun. We follow every step with the utmost care, combining techniques passed down from our ancestors with innovations that allow us to guarantee a healthy, top-quality product.
From Field to Table: Careful Processing
Harvesting takes place in late summer, when the grains have reached perfect golden ripeness. But it´s after harvest that the real magic happens. Our rice is dried slowly and at low temperatures to preserve its organoleptic characteristics.
The next step, husking, is performed using delicate, artisanal methods. Careful processing allows us to obtain a perfect grain, which retains its nutritional properties and, above all, its exceptional ability to absorb seasonings and hold its shape after cooking.
Our Varieties: Excellence for Every Recipe
Our production focuses on the finest Italian rice varieties, ideal for bringing the authentic flavor of tradition to the table.
Carnaroli Rice: Considered the "King of Rices," it is our flagship product. With its large, firm, and pearly grains, it boasts an amylose content that guarantees extraordinary cooking stability. It is the irreplaceable ingredient for creamy, perfectly al dente risottos, capable of enhancing any type of sauce.
(Other varieties may be available, e.g., Arborio or Baldo): Alongside Carnaroli, we also grow other historic varieties, such as Arborio, with its large grain and excellent absorption capacity, ideal for creamier, more traditional risottos.
